~Raya dan Rendang Tok~

Salam.

Pada raya tahun ini saya berkesempatan masak Rendang Tok. Resepi nya, kebetulan tertengok astro channel AFC(asian food channel). Resepi dari Chef Wan kite. So, kalo tak sedap tu, salahkan chef wan. Tapi saya dah test resepi dia, senang dan sedap uollsssss...

Memang saya akui, saya tak punya banyak masa untuk keluar beli barang-barang untuk masak. Kebetulan 2 hari sebelum raya, saya sempat beli daging batang pinang untuk dia buat Rendang Tok. Dengan kekangan masa yang ada, sebab itu saya masak resepi yang mudah dan sedap. Selain itu, saya juga kadang-kadang ubah resepi mengikut kesesuaian bahan-bahan yang ada di rumah (kadang-kadang xcukup bahan pun). Tidak dinafikan juga, bukan semua orang menggemari Rendang Tok ini. This Rendang Tok tasted so aromatic with all spices and herbs added in..this recipe defintely a keeper..And rendang taste even better if keep till the next day, more flavourful ! 2-3 kali saya tambah nasi, abis la diet....








  
125 ml / 4 fl oz Vegetable Oil 
2 Tbsp / 1 oz Coriander Powder 
2 Tbsp / 1 oz Fennel Powder 
2 Tbsp / 1 oz Cumin Powder 
2 Tbsp / 1 oz Black Pepper, finely ground 
1 kg / 2 pounds 3 oz Beef, cut into chunks 
50 ml / 1 1/2 fl oz Coconut Milk (Santan Cair) 
2 Tbsp / 1 fl oz Tamarind Juice (Assam Juice) - mix Tamarind Pulp with hot water, strain 
8 Tbsp / 4 oz roasted, pounded desiccated Coconut (Kerisik) 
6 Tbsp / 3 oz sugar 
1 Cinnamon Bark (Kulit Kayu Manis) 
2-3 Star Anise 
Handful of Cardamom Pods 
Handful of Cloves 
Salt to taste 
Paste Ingredients - to be finely grounded 
15 Shallots (Red Onion), peeled 
6 Garlic cloves, peeled 
2 cm / 1 inch Ginger, peeled 
1 Tbsp roasted Shrimp Paste (Belacan) 
30 dried Chilies (Cili Kering) - softened in hot water, drain 
cup water


 

  1. Heat vegetable Cooking Oil in wok. Stir-fry Cinnamon, Star Anise, Cardamom Pods and Cloves till fragrant.
  2. Add in Paste and simmer till Oil surfaces.
  3. Add in Meat, coat well with Gravy, and simmer for another 1-2 minutes,
  4. Mix in Coriander Powder, Cumin Powder, Fennel Powder, Black Pepper and Coconut Milk.
  5. Lower heat and simmer for 30 minutes, or till meat becomes tender.
  6. When the Gravy thickens, add in Tamarind Juice, roasted, pounded desiccated Coconut (senang cerita, KERISIK...tak payah banyak bunyi)
  7. Stir well.
  8. Season dish with Salt and Sugar, to taste.

3 Step to cook Rendang Tok ala selebriti Chef Wan (version can be executed in 3 easy steps!) 

1. Combine all the spice paste ingredients in a blender and blitz it until smooth.

2. Heat the oil in a wok or large pan. Fry the onions and aforementioned blended spice paste over low heat for about 10 minutes, stirring constantly.

3. Then add in your beef, the tamarind juice, sugar and salt to taste, followed by the turmeric leaves. Continue to stir constantly until the beef is cooked and the gravy has thickened.





* so simple and so sedap uollsss.... cuba la...
